The fillet of the silverside or "salmon cut" is a highly versatile joint which takes very well to quick roasting or can be sliced into beef medallions for pan frying or braising. It's also an incredibly popular choice for making biltong or beef jerky.

Oven roast at 200°C for approximately 2.5 hours until desired doneness is achieved throughout.
